We're a farm and ranch located in Hotchkiss, CO raising Rocky Mountain Elk and growing a variety of heirloom vegetables and gourmet mushrooms. "Before I had begun farming in 2014, I had worked as a chef for several years in various local restaurants and one culinary school through which I found the world of heirloom produce; the immense variety of cultivars with striking appearances and exciting flavors, some of which had likely never seen a retail shelf or been mentioned in a food blog. This is what would compel me to begin farming with the hopes of making this exciting world of product more available to homes and restaurants. While growing hops from 2014-2018 and hemp in 2019 and 2020 with my father I always had a selection of these vegetables and herbs growing, season after season selecting the best crops of the garden to return the next year. Many years later, I'd like to offer our selection of heirlooms to our neighbors of the North Fork Valley in western Colorado with services for consumers, chefs, and resellers alike. Along with the product from the gardens we also cultivate choice mushrooms in a seasonal cycle along with cut and live microgreens and of course, Rocky Mountain Elk meat in a selection of grinds, cuts, and roasts.
